Sooo Spicy (Jalapeno Cornbread)
Sometimes breakfast can be over sweet, but not with this Southwest savory recipe! A cornmeal and jalapeno PanWaffle cooked to crispy perfection will leave you wanting more. This delicious breakfast treat is best paired with your favorite honey.
INGREDIENTS (YIELDS 5 PANWAFFLES)
- 1 cup of yellow cornmeal
- 1 cup of flour
- 2 tablespoons baking powder
- 1 tablespoons of sugar
- 1 teaspoon of salt
- 2 large eggs
- 2 tablespoons of oil
- 1 jalapeno chopped fine
Mix all ingredients (except jalapeno) together with a whisk, fold in jalapeno then let stand for 5 minutes.
Pre-heat pan for 2 minutes before pouring batter.
Pour (1 cup) into pan and cook for 1:30.
Hold handles together, flip and cook for an additional 1:30
Carefully remove PanWaffle and enjoy!
